How Korean BBQ Works

Samgyeopsal vs Galbi vs Hanwoo

  • Samgyeopsal (삼겹살): thick pork belly, the most common and cheapest choice. Moksal (pork neck) is a leaner pork cut.
  • Galbi (갈비): short ribs, often marinated in sweet soy. Dwaeji galbi is pork, so galbi is beef.
  • Hanwoo (한우): Korean native beef, highly marbled and the most expensive option.

Ordering & Grill Etiquette

  1. Minimum order: most places require at least two servings to start. A serving is usually 150–200g.
  2. Who grills: at many popular restaurants the staff grill and cut the meat for you. Otherwise, wait until one side is browned before flipping, and cut with the scissors provided.
  3. How to eat: wrap the meat in lettuce or perilla with garlic, ssamjang (spicy bean paste) and kimchi.
  4. Finish with a meal: order doenjang jjigae (soybean paste stew), naengmyeon (cold noodles) or fried rice.
  5. Side dishes are free and refillable. There is no tipping.

Best Korean BBQ in Gangnam

Gangnam has some of the most talked-about Korean BBQ in Seoul. In addition, both places below have staff who grill at the table, so you can simply sit back and eat. Below, the notes come from visits by Revitguide reviewer 호미식 (Homisik), who rated each 4 out of 5, and are written in the reviewer’s own voice.

Gilmok (길목), Cheongdam

Gilmok grills thick cuts of domestic sow pork over charcoal in drum-style tables, a 2-minute walk from Cheongdam Station. Also, the menu is short: pork neck (moksal), pork belly with skin (ogyeopsal) and kkeopsal, plus grilled vegetables and a few sides.

This place deserves its own word: “Gilmok-sal.” On the way there, I read through the Revitguide reviews, and nine out of ten were about Gilmok’s pork neck. So I started with the neck, and from the first bite I understood why. Of course, lots of places serve thick pork now, but Gilmok’s neck doesn’t win on thickness alone. The inside keeps plenty of juice, and the outside carries a pleasant charcoal aroma.

Ordering at Gilmok: Neck First, Kkeopsal Last

Someone described it as steak-like, and I agree. Indeed, cut this thick, each bite bursts with juice, followed by smoke from the charcoal. It is good on its own. However, I liked it even more dipped in meljeot (salted anchovy sauce). The staff recommended the mixed vegetables. They were nice between bites of meat. Even so, if I came back I wouldn’t call them a must.

Finally, I finished with kkeopsal, lean meat with the skin still attached. In contrast to the neck, it has a different texture and a richer flavor. A whole plate might get heavy. Instead, a few pieces after plenty of neck made a great ending. In short, next time I would order the same way: start with the neck and finish with kkeopsal. At Gilmok, that formula is all you need. Revitguide reviewer 호미식 (Homisik) rated it 4 out of 5. Read the original review on Revitguide.

Dongria (돈그리아), Seolleung

Dongria is a pork BBQ restaurant near Seolleung Station, best known for galmaegisal (pork skirt meat). Staff grill everything over charcoal, and the menu also has a thick pork neck and dukkeobi, a skin-on cut.

My Visit to Dongria

Several top Revitguide reviewers had been here, and after reading their reviews I had to go. Because I expected crowds, I aimed for the quietest slot I could think of, 4:30 p.m. on a weekday, and walked straight in. It is famous for galmaegisal. Still, one cut felt like too little for a first visit, so I ordered the neck, galmaegisal and dukkeobi.

First of all, the meat was thick, tender and tasty. Best of all, the staff grill it for you over charcoal, so the meal is easy. Also, the first piece comes on a specially made spoon. Small details like this make it feel different from a typical BBQ restaurant. Therefore, it felt less like a plain BBQ joint and more like a place that had designed the whole experience of eating meat.

Why Dongria Stands Out for Korean BBQ in Seoul

The galmaegisal I was most excited about was as good as I had hoped. Above all, it was well seasoned and pulled off the grill at the right moment, so it stayed juicy. So after one bite, I could see why it is famous. Meanwhile, the neck was tender and thick, the kind of good neck you hope for at a great BBQ place. In addition, fatty parts are cut into small pieces that look a bit like chicken feet, which is fun to eat and to look at.

Dukkeobi and the Herring Roe Sauce

The dukkeobi stood out too. For example, it reminded me of hangjeongsal (pork jowl), but chewier and nuttier, and the rich flavor builds as you chew. I also ordered the special herring roe sauce, made with herring roe, sauce and truffle oil. Especially with wasabi, it tastes fresh and delicious. Personally, I loved it. However, the truffle was stronger than expected, and my companion found it a bit much. It may divide people. Even so, it is a fun combination worth trying once.

Overall, the meat was good, the grilling service made it easy, and the details, from the first piece to the sauces, were well thought out. Revitguide reviewer 호미식 (Homisik) rated it 4 out of 5. Read the original review on Revitguide.
